At The Kid’s school bookfair this year, I saw a cookbook that jumped out at me: Cheap. Fast. Good. I haven’t had a chance to try out many of the recipes, but I did spend most of the weekend doing one of their suggested techniques for “fast” - bulk cooking.
Earlier in the week, I made up a bad of ground beef. Yesterday, I got serious. I made seasoned chicken chunks for three meals, grilled chicken breasts for two meals, spinach-parsley pesto for three meals and shredded beef for three, also. Today, I made a batch of meatballs for two meals. I now have enough stuff pre-cooked in the freezer for eleven meals. Some things can/will be combined into a single meal, such as the pesto and the chicken. Now, when summer is right on top of me and we’ve just joined a pool for the rest of the season and the last thing I want to spend an hour doing after work is cooking, I’m covered for at least ten days. Thaw, mix with stuff, heat and serve. Fifteen minutes to the table. I’m very psyched.
For dinner tonight, we had Swedish meatballs. I was disappointed with the sauce; it was pretty bland. Nothing a little thyme couldn’t fix, though. I also don’t need to be limited to their recipes. The ground beef will work just fine for chili, chicken for burritos, etc.
In other news, I had a pretty serious depressive episode this week. Hopefully it was just a fluke, because I’m feeling much better now. I’m keeping my eyes open for another recurrence, though.
